Summary

A cryogenic impingement freezer has been developed by CIMS and Air Liquide. This equipment offers two key factors for a very fast freezing process: a high heat transfer coefficient thanks to impingement technology and very low working temperatures thanks to the use of cryogenics. This machine has been tested and the results show that the freezing time and the weight losses during the freezing process are significantly reduced.
