A unified strategy for modelling meat refrigeration process indicators.

Summary

The meat refrigeration process must be carefully designed and controlled to produce meat of the highest quality at the lowest achievable cost. The success of the process design or operation can be evaluated using key process indicators such as energy consumed, meat temperature, tenderness and microbiological growth that summarise the effectiveness and efficiency of the process. A unified strategy has been developed that allows all of these indicators to be predicted within an integrated framework.
