Summary

The paper deals with experimental determination of heat transfer coefficient in packed bed of vegetables, using a variable intensity of turbulence in the flowing air stream. The paper presents the results of the influence of turbulence intensity on the heat transfer coefficient in the carrot bed. Correlations for heat transfer coefficient can be found in the literature for calculation of heat transfer, but in most cases, they are developed for elements with simple geometry such as a sphere, cylinder, cone or a flat plate and they are not suitable for packed vegetable beds with very complex geometry. Therefore, the method of single blow technique to determine the heat exchange in the beds consisting of specific vegetables on the example of a carrot bed was applied. The measurements were made with air flow with three different turbulence intensity values as well as longitudinal positioning of the carrot in the bed. The results obtained in this way will allow to create a correlation for heat exchange for a specific type of vegetable.
