Summary

Spinach were stored at 10 deg C for 12 days in gas-permeable packages. Populations of mesophilia, psychrotrophs, pseudomonads and Enterobacteriaceae rose considerably during storage. The number of Micrococcus, lactic bacteria and yeasts remained constant. The predominant bacteria were Pseudomonas fluorescens, Aeromonas caviae and Staphylococcus xylosus; and Cryptococcus for the yeasts. No pathogens were detected. The microorganisms are located in zones where cuticles are damaged and not at the surface of the non-minced leaves.
