Résumé

A significant part of Food Loss and Waste is directly caused by inadequate food cold chain conditions. Recently, it has been established that cold chain research should focus on the predictive modelling of the impacts of time and temperature management systems. Simulation tools are increasingly comprehensive and accessible and provide a viable alternative to costly experimental investigations to assess various cold chain management systems. In spite of the fact that these tools exist, acquiring reliable data in order to generate realistic distribution scenarios remains the greatest challenge. Consequently, the objective of this ongoing project is to make available a reliable technology platform for realistically simulating, on a pilot scale, all the conditions (time, temperature, depressurization, vibration) encountered during transportation and, for tracking bacterial flora all along the distribution chain continuum. This platform allows: to investigate cold chain management systems; to improve food safety; to generate various reliable indicators.
