Food quality and energy management: the contribution of the advanced control of refrigeration systems.

Résumé

As it permits to preserve food quality and safety from farm to consumer, the refrigeration technologies are widely used in food industries. Indeed, the best available figures allow to estimate at 350 million tons the quantity of food handled by the cold worldwide, whereas 1 500 million tons could be refrigerated to good effect. This use refrigeration comes along with an important energy consumption: up to 8% of the world electric production, it is 1 300 TWh of electricity. The increasing necessity to consider the sustainability of the authors' activities explains the interest one has to have about the management of the energy consumption of the refrigerating equipments. But this interest does not have to hide the major constraint: preserve food quality and safety. Many researches are carried out on the improvement of the energetic performances of the refrigeration systems. A large amount of these researches deals with the design of the components and in the integration of these components in a global system. Sometimes, the authors propose to take into account the coupling with the process and the integration of processes. Thermo-economic studies based on entropy/exergy notions appears a promising approach. But only few of these researches deal with the control of the refrigeration systems, and especially with the predictive control.
