Résumé

It sounds rather commonplace to start a paper by saying that refrigeration is today indispensable to our food supply. Indeed, the benefits of cold are outlined by a number of authors and references and there is no doubt about it: when applied to fresh and perishable food, refrigeration slows down its natural evolution, making it possible to increase the shelf life of the product and at the same time, to preserve its quality. In this way, refrigeration has a vital role in worldwide alimentation: it is applied to approximately 14% of the 5500 million tons of food produced throughout the world, i.e. 400 million tons, whereas 1800 million tons could be refrigerated to good effect. Greater use of refrigeration would ensure better worldwide nutrition in terms of both quality and quantity, especially in developing countries where the losses of perishable foods through a lack of refrigeration could be evaluated at 23%.
