Brief: A stop to weight loss!
Although spraying of refrigerated meat produce throughout transportation has been in operation for over 20 years, water loss continues to be a problem during the second phase of refrigeration in the cold chamber. However, if the entire enclosure is also sprayed, achieving relative humidity of 95% in the cold chambers and in the freezer sections, a minimum of 0.2% is lost. Turbofog, designed by the German manufacturer Draabe, achieves such conditions. It consists of a high-pressure titanium nozzle that can provide spraying below 10°C without wetting the carcasses, with the added advantage that it is cheaper and less costly to operate than vapour and ultrasound systems.
