A new system involving the direct spray cooling of vegetables in supermarket displays allows for greater freshness and a more appealing product. A recent study carried out in the US has shown the benefits of such a system: in lettuce, only one out of 10 lettuces are lost as opposed to 5 when spray cooling is not applied. Spray cooling ensures a longer shelf life and it also reduces the amount of handling since products can remain on display day and night. Given the varied range of installations, i.e. enabling the size of the drops to be selected along with the intensity of the spray, cycle programming, automatic cleaning, etc., each shop can quickly integrate the system it needs.
