Résumé

A novel transport container incorporating phase change material (PCM)-based cold thermal energy storage (CTES) was developed, enabling simultaneous vacuum freezing of both the PCM and food product within one system. Experimental and numerical analyses were conducted to investigate freezing behaviour and thermal storage performance. Complete PCM solidification required 22 h, reaching an average temperature of -4.5°C, after which a potato sample was vacuum-frozen to a core temperature of -5°C within 2 h. The numerical model of vacuum freezing was developed and validated with temperature profiles from experimental data. After shutdown of the vacuum and refrigeration systems, the PCM absorbed external heat and provided passive cooling to the chamber. Consequently, the food product remained below 1°C for over 20 h and below 5°C for
nearly 30 h at an ambient temperature of 16°C. The results demonstrate the potential of CTES-assisted vacuum freezing for refrigerated transport.
