Résumé

Ice slurry which has high cooling efficiency is used in food refrigeration and transportation, and is mixed with catechin to give a sterilizing effect. However, when the ice slurry is transported through the pipes, ice adhesion to the wall surface of the pipe may cause blockage in the pipe. From past studies, catechin and surfactant were mixed and the ice adhesion force generated on a copper plate was measured. It has been clarified that the ice adhesion force generated by adding surfactants was lower than that generated from pure water. In this paper, the ice adhesion force was evaluated as the shearing stress, which is the value obtained by dividing the measured reaction force by the adhesion area. From the measurement results, the ice adhesion force at each concentration of the surfactant was clarified
