Résumé

For the evaluation of new refrigerants, a thorough profitability analysis is, besides the technological aspects, one of the key issues. Additionally, the thermodynamic evaluation of the refrigeration processes and equipment is indispensable for safe operations. Freezers for food conservation still mainly use ammonia. With CO2 as a refrigerant, it is possible to achieve even lower air temperatures than with ammonia in the freezer, as sub-pressures will be avoided. Thus, the product can be cooled more rapidly and retains more moisture, which results in better quality. Due to the lower air temperatures, higher output rates can also be achieved i.e. more products can be frozen within the same period of time. Additionally, ammonia can be kept away from the production sites.
