Résumé

Development of sustainable food production requires a reduction in the strain that present production systems pose on the environment. Intensive animal husbandry for meat production draws particularly heavily on the environment by the generation of unintentional emissions and surplus manure, and the excessive use of energy, space and raw materials. Novel Protein Foods from plants are a promising alternative that can reduce the disturbing impact of food production on the environment.
