Résumé

The past fifty years has seen considerable change in the design and operation of low temperature cold stores. These changes have been driven by two factors; firstly, the increasingly dynamic evolution of retailing and its impact on the frozen food supply chain and secondly, the rapid development of technology. The paper looks at both of these issues and attempts to provide a practical insight into the impact they have had in the United Kingdom. Finally, it reviews the development and economics of a recent high rise cold store.
