Emploi de l'atmosphère contrôlée pour améliorer la conservation du fenouil.

Controlled atmosphere for improving shelf life of fennel.

Résumé

Orion fennel was stored under a controlled atmosphere of 5% O2 + O% CO2, 5% O2 + 5% CO2 and 21% O2 + O% CO2 (used as a control) up to 11 days at 0 or 5 °C and 90-95 M relative humidity. Cold storage was followed by a shelf life of 3 days at 15 °C and 60-70% relative humidity in air. Another cultivar "Clio" was subjected to the same tests. Before storage all bulbs were washed with chlorinated water (50 ppm). Controlled atmosphere of 5% O2 and 0 to 20% CO2 and temperatures of 0 and 5 °C kept the visual quality of fennel up to two weeks. No differences between controlled atmosphere assays of both cultivars were found. These atmospheres reduced browning on the basal cut zone and on external leaves. Compared to storage in air, both controlled atmosphere improved shelf life of both fennel cv. Under these different storage conditions, neither chilling injury, nor decay developed.
