Résumé

The Codex alimentarius has actuated the proposals of different organisms. It was founded in 1962 as a joint program of two specialized organizations of the United Nations, FAO and WHO. Along with the Codex alimentarius Commission, other organisms work with the same objective: to build up references to improve the safety of food and to facilitate international exchanges. Its structure involves a Commission of 158 member countries, an executive committee and a permanent secretariat. Work is performed by specialized committees. Their proceedings fill 19 volumes containing standards and guidelines. The World Trade Organization Committee proposes to use these rules to eliminate the technical obstacles to food-product trade.
