Résumé
This article retraces the early days of British imports of Australian frozen meat. A letter (dated July 24, 1868) from a consumer to the Times is published: the writer describes his experience in thawing frozen meat and provides advice on the matter. Pioneers who enabled refrigeration technology to be perfected, allowing the first shipments to reach Britain in good condition, are described: E.D Nicolle and T.S Mort were the key instigators.
