Impact of roughness of a nickel metallic surface on the supercooling degree of a water-ethanol aqueous solution.

Résumé
This paper presents a study on the impact of the roughness of a metallic surface on the magnitude of the supercooling degree during freezing of an aqueous solution. Nickel surfaces of known roughness ranging from 0.05 to 12.5 micro-m were used. An aqueous solution of ethanol (5% w/w) was considered as a model solution. On each surface, a 20 micro-l droplet was crystallized. A thermocouple in each droplet permitted to measure the supercooling degree when phase change occurred. In our conditions, the supercooling degree was between 4.9 and 17°C. The authors showed that roughness has a strong influence on the supercooling phenomena, confirming that the lower the roughness, the higher the supercooling. A power law trend was observed between the roughness and the supercooling. Moreover, experimental results pointed out that this dependency is more sensitive for roughness less than 3.2 micro-m.
