The Australian retail grocery cold-chain.

Résumé

Most of the chilled and frozen food consumed is sold through large supermarkets. Chilled and frozen foods are generally distributed by road (imported refrigeration units with vehicle bodies designed and manufactured to suit Australian operational constraints). Deliveries are generally palletised, with chilled and frozen foods often transported as "mixed loads". This practice keeps the chilled foods cool, but may allow frozen foods to warm and chilled foods to freeze. Past Australian cold-chain studies are summarised, and a recent study is described. The findings are discussed. In the Australian Code of Practice, frozen foods must be never warmer than -18 °C, and chilled foods (of all categories) must be never warmer than +4 °C.
