Résumé

Compared to forced air cooling, mist-chilling, which uses air and suspended water droplets as a cooling medium can reduce weight losses and accelerated heat transfers. The results presented in the paper deal with the experimental study and modelling of heat and mass transfer during mist-chilling in a packed bed of spheres. A numerical model was established to predict temperature-time response in a packed bed of spheres. This model takes into account local air temperature, local droplet concentration, heat and mass transfer coefficients. Model predictions are in good agreement with the experimental results under different conditions of temperature, velocity, and water mass flow rate. This model could be used to control the chilling process.
