Résumé

In 2008, a total of 131.468 confirmed cases of human salmonellosis were reported in the EU. This represents a significant decrease over the past five years. As in previous years, S. Enteritidis and S. typhimurium were the most frequently reported serovars that cause infections in humans. In the Animal Origin Food Inspection laboratory of the VSA Department, 1327 samples, sent over three years from April 2007 to April 2010, were analyzed. The rates of positivity obtained by the laboratory are significantly different from the European average for meat samples. A positive rate was found of 13.51% in chicken, 10.16% in pork, 13.23% in cuts of pork for salami, 5.71% in salami already on sale and 2.16% in beef. While data obtained for fish overlap with those reported in the EFSA report, confirming the absence of Salmonella in all samples analyzed. The two serotypes more isolated are S. typhimurium and S. derby, are those most frequently found in meat products.
