Résumé

Direct evaporation vacuum freezing is a process in which water evaporates near triple point conditions (611 Pa; 0,01 °C). The heat of evaporation is taken from the water itself which cannot be cooled to a lower temperature is the water is as cold as 0 °C already. Ice crystals are formed at the free water surface providing the heat of fusion for vapour generation.
The direct evaporation vacuum freezing process uses water as refrigerant. Ice is produced by an effective evaporation temperature close to 0 °C as no heat exchanger is between the ice and the water. Ice slurry production for cold thermal storage is the most obvious use of this process. Other applications include: cascaded heat pump using natural or artificial (cold) water reservoirs and the generation of snow.
Several applications of the direct evaporation vacuum freezing process, their benefits and challenges are discussed within this contribution.
