Caractéristiques de production continue des coulis de glace contenant un agent tensioactif.

Continuous making characteristics of ice slurry with functional surfactant.

Résumé

An experimental investigation was performed to determine continuous ice slurry making characteristics of water solution added with a functional surfactant in a cooled pipe. In order to make ice slurry continuously, it is necessary to prevent ice particles from adhering to a cooling surface and agglomerating themselves. The ice making characteristics of the propylene glycol water solution added with an anti-agglomeration surfactant were observed in the study. The results revealed that ice making could be continuously operated at higher degree of super-cooling condition by addition of the surfactant in comparison with the case of the water-only solution without the surfactant.
