Résumé

In laboratory experiments, orange cv. Valencia fruits were packed in stacked boxes, surrounded by polystyrene, in order to simulate stowage in the centre of the cargo under ventilation. The stowage was subjected to a progressive decrease in temperature. The cooling dynamics of the fruits were monitored. The results enabled the best time to end ventilation to be determined.
