Résumé

This paper presents the results of a project to develop a R744 commercial self-pasteurizing soft serve ice cream making machine that is cost competitive and matches the performance of a typical cost optimised R404A system. A prototype was developed with components easily available on the market; this system consists of a two stage reciprocating semi-hermetic compressor, low-cost fin and tube gas-cooler and intercooler, an internal heat exchanger and two different evaporators (one for soft ice cream production and one for mixture conservation). Energy efficiency of the new system was compared with the one of the same appliance employing conventional technology and the preliminary tests, before design optimisation, have demonstrated that the energy consumption is comparable with the one of R404A. Different possibilities of improving the energy efficiency of the CO2 system are analysed.
