Résumé

The effect of fan speed and product loading configuration on the air flow distribution and heat transfer performance in the freezing chamber was investigated. Tylose gel blocks were used as the sample. The heat exchanger surface temperature, flow velocity at multiple locations in the chamber, and the heat flux of gel surface were measured. 3D CFD model was carried out to simulate the conditions and validate the experimental results. The simulation results can fairly predict the air flow and heat transfer on the local positions at different sample loading conditions. By adjusting the fan speed from 700 to 840 rpm, the overall convective heat transfer can be improved by 11%. The product loading adjacent to the air flow direction (configuration 1) yielded a 16% higher overall heat transfer compared with the parallel loading (configuration 2) for the same fan speed.
