Résumé

The particle-to-air heat transfer coefficient acquired in particulate uniform fluidized beds is high. In fixed bed close to the mf point, it is a few percents lower. In the commercial freezers the crust freezing process is realized in a gently fluidization and deep freezing in fixed bed. In old type apparatus the bed was far from uniform (channels, clumps, clusters, etc.) which results in substantial worsening of the freezers efficiency. Due to the new improvements the results obtained in modern freezers presented in the paper are close to those from the laboratory stand. The freezers capacity declared by manufacturers for large particle products was confirmed in the tests, whereas for small ones is approximately 25% beneath the real value.
