Résumé

This paper evaluates strategies to improve the energy efficiency of low temperature blast freezing systems commonly used in the production of frozen food products. Specifically, computational fluid dynamic (CFD) models are used to assess air flow patterns within existing spiral freezing systems. These predicted flow patterns are validated using experimental methods. Local velocities within the spiral freezer predicted by CFD are used to estimate the heat transfer coefficients experienced by the food product as a function of position in the freezer. The local heat transfer coefficients and air temperature are then used to drive a model that predicts the freezing process within the food product. Optimization is performed using this model to determine the ideal air profile within a spiral freezer. The impacts of various factors are quantified with the goal of improving freezing performance.
