Résumé
Current standards in cold chain are operating at -18 °C or colder to store frozen foods. Is that still optimal in a world which has to reduce greenhouse gas emissions? The public-private partnership project FROSTEQ (2025–2029) is aiming to challenge and refine this practice by exploring and exploiting temperature tolerances of frozen food products. Through scientific research and collaboration with industry partners, FROSTEQ will assess if controlled increases and fluctuations in storage temperatures can safely reduce energy consumption and CO₂ emissions, without compromising product safety and quality. The project addresses critical knowledge gaps, including real-world temperature variations across the supply chain, product-specific stability thresholds, and consumer acceptance of adjusted standards. By developing evidence-based guidelines and optimization strategies, FROSTEQ will provide scientific and practical foundations for a more energy-efficient, sustainable, and resilient frozen food chain. This paper describes the main activities in the project, and shares the first results.
