Résumé

These proceedings contain 22 papers (including 1 in English) of the symposium on the cold chain, held in Mexico, May 21-22, 1997, organized by the university programmes on food, energy, health, environment and urban studies. Extract from the table of contents: cold chain of food (storage; perishable products); cold chain and health (immunization: vaccine; laboratory and diagnosis of disease); air conditioning and environment (the refrigeration industry and environmental impact of refrigerants); refrigeration techniques (refrigerated transport; standardization of equipment; energy saving). Some of the papers will be abstracted in a future issue of the IIR Bulletin.
