The control of micro-climatic conditions and indoor pollution in public establishments is a very topical subject. The author focuses on bars, restaurants and large kitchens where the control of pollutant levels and air quality is strictly linked to the features of ventilation and air-conditioning systems. The article describes these systems and their performances, underlining the most important points for their choice and operation.
