Résumé
The aim of this study was to investigate the correlation between the amount of frost on food surfaces and temperature and the ambient temperature conditions maintained during storage in household refrigerators.A 12-week storage test was conducted using commercial beef and household refrigerators obtained from four different companies. The weight change of the frozen samples during storage was measured and the rate of weight loss was defined as the amount of frost on the surface. In addition, the temperature of the sample surface and the ambient temperature inside the package were analysed in real time. The results showed that the results correlated well with the theoretical equation, indicating the usefulness of the theoretical equation and the possibility of simple prediction of the amount of frost occurrence by measuring temperature fluctuations in the evaluation of the frozen food storage system in a household refrigerator.
