The rate of moisture sorption by packaging in the cold chain.

Résumé

Moisture adsorbs or desorbs into cardboard packaging as foods pass through the cold chain. This moisture sorption can have a significant effect on the air relative humidity, the sensible heat ratio and therefore processes such as product weight loss, coil frosting and defrost, and condensation or frosting on other surfaces. The rates of moisture sorption were characterised for corrugated cardboard from one or both sides at ambient and refrigerated temperatures. The moisture sorption gave significant short-term packaging temperature rise (adsorption) or decline (desorption) due to the heat of sorption. The rates of sorption were found to be accurately represented by a first order kinetic approach to equilibrium conditions. This model and experimentally measured rate constants can be used to estimate the moisture sorption to or from the outer regions of pallets of packaged foodstuffs.
