Résumé

Antifreeze proteins and antifreeze glycoproteins are known as anti-ice nucleating agents, which inhibit heterogeneous ice nucleation. Antifreeze proteins and a few synthetic polymers had great influence on the kinetics of ice nucleation. The emulsified solutions were supercooled without ice nucleation down to temperatures close to the homogeneous ice nucleation temperature even in the presence of silver iodide particles. A method to stabilize supercooled water against ice formation in heat exchangers by using anti-ice nucleating agents is proposed.
