Résumé
History of ice accumulation. Two examples of ice accumulation used in the food industry are given: 1) A cheese-making factory: general advantages of ice accumulation, in particular energy savings due to night operation of the refrigerating plant, reducted investment; continuous operation, even during maintenance. Description of the various types of accumulation systems: static systems (ice accumulation on tubes in which glycol water is circulating); internal or external melt; dynamic systems, with accumulation of ice flakes ("ice harvesters") or accumulation of water-ice mix ("ice slurry makers"); directions for choosing an ice accumulation system. In the example, static systems, in spite of their lower investment cost, were eliminated for the following reasons: reduced efficiency due to ice accumulation on tubes; risk of tube corrosion; difficult maintenance; the ice harvester was also eliminated due to higher investment and operation costs (defrosting cycle) in comparison with ice slurry makers; description of the ice slurry maker eventually selected. 2) An egg powder production plant: description of the process; selection of the system: refrigerating units with glycol water, without accumulation, were eliminated for many reasons (higher electric load; possible contamination of the egg product by glycol; risk of freezing the product; lack of cooling reserve); ice-on-coil accumulators were eliminated as well due to high maintenance cost and problems of accurate temperature control.
