The food market was analyzed and the main factors affecting the shelf life of food products were reviewed. The following topics were discussed: chilling aims, the chilled and frozen food market, chemical, biochemical, microbiological and sensorial changes of food during refrigerated storage, and controlled and modified atmosphere storage; the cold chain.
