Modeling internal sprouting in garlic bulbs (Allium sativum L.) during refrigerated storage and transportation in reefer containers.

Résumé

A mathematical procedure was developed to predict internal sprouting in garlic bulbs for consumption during refrigerated storage and transportation, based on the Visual Dormancy Index (VDI) and time-temperature history. The model uses a three-parameter modified cumulative Weibull function calibrated with published experimental data for Chinese garlic over a temperature range of -3 to 23◦C. The Weibull model accurately described VDI evolution, explaining more than 99% of data variability at all temperatures (R² > 0.990). Model parameters showed a clear temperature dependence and were expressed as piecewise linear functions, enabling simulations under constant or variable temperature conditions. The model was implemented in Microsoft Excel® and allows prediction of VDI thresholds associated with marketability, consumption suitability, and visible sprouting. Validation using published data from nine garlic cultivars showed excellent agreement between predicted and observed values (r = 0.994; p < 0.0001), supporting the robustness of the approach.
