Barley germination exotherm modelling for refrigeration systems optimising in malting plants.

Résumé

In the malting process for beer, heat production is very intense during barley germination after soaking. A significant quantity of CO2 is produced. The germinating barley is refrigerated by cold and saturated air. This air will carry out a correct grain ventilation, and will give the necessary oxygen to germination process develops. In spite of the importance of the knowledge of the rate and intensity of heat production during germination, there are not research works in bibliographic modelling the thermal behaviour of barley germination in malting process. The work contributes to the mathematical model solution of thermal behaviour of germination equipment in malting process, solving the mathematical model of the heat generation rate term (exotherm) in the heat balance of the germination equipment.
