Résumé

This paper evaluates strategies to improve the energy efficiency of low temperature blast freezing systems commonly used in the production of frozen food products. Computational fluid dynamic (CFD) models are used to assess air flow patterns within a spiral freezing system. These flow patterns are validated using experimental methods. Local velocities within the spiral freezer predicted by CFD are used to estimate the heat transfer coefficients for the food product as a function of position. The local heat transfer coefficients and air temperature are then used to drive a model used to predict the freezing processes within the food product. Optimization is performed on the model to determine what the ideal air distribution is within a spiral freezer. The impact of various spiral freezer modifications on product freezing time can be quantified using these techniques.
