Safeguarding quality in liquid foodstuffs transport.

Résumé

A thorough analysis is made in this paper simulating the case of a three-compartment liquid-foodstuff isothermal tank transporting various liquids such as milk, juices or olive oil. This analysis shows the importance of surrounding conditions (environmental temperature) and the need for certain temperatures of the liquid foodstuff during loading to ensure the right temperature at the end of the transport. The ATP certificates valid for 6 years give the k-value for the insulation of the isothermal tank. Unfortunately, this is not enough in order to know the temperature the liquid foodstuffs should have during loading in order to ensure the ATP agreement requirements since various factors affect the heat transferred to the product during transport (thermal capacity, environmental temperature, total mass of liquid, sun radiation, etc). In this work a simulation model has been developed.
