Supermarchés : mesures in situ.

Field measurements in supermarkets.

Auteurs : AXELL M., LINDBERG U.

Résumé

Supermarkets are large energy users and refrigeration accounts for half of the electricity used in supermarkets. Sales of both frozen and cold food increases and if no measures are taken, electricity usage in supermarkets will increase even more in the future. It is therefore of interest to describe the energy usage in supermarkets today in order to propose how energy efficiency can be improved. Earlier studies have shown that open vertical display cabinets are a weak link in the cold chain and also a large energy user. The purpose with the field measurements have been to link the results and conclusions of earlier studies in a climate chamber, in which it was possible to control both the ambient climatic conditions and the food temperatures. The result showed a variation with a factor of 4.5 between the most and least efficient system for storage and display of chilled goods.
