Résumé

Energy consumption of the pasteurization process is highly important due to the need for liquid product heating (above 70 °C) and subsequent chilling (below 15 °C) after pasteurization. This study theoretically investigates large-temperature-lift heat pumps (LTLHPs) using natural working fluids (R717, R744, NH3/H2O mixture, hydrocarbons) for simultaneous heating and cooling in the pasteurization of juice and liquid milk products. The thermodynamic performance of these work-driven LTLHP cycles is simulated for a range of heating and cooling supply temperatures (70 °C to 150 °C and 0 °C to 10 °C) typical of pasteurization processes in the juice and dairy industries. The simulated performance of the LTLHPs is also compared to a business-as-usual scenario for liquid product pasteurization in the food and beverage industry. Using heat pump cycle designs with large-temperature-lift and high heat sink outlet temperature (above 80 °C) with natural working fluids contributes to developing carbon-neutral food and beverage manufacturing processes.
