Résumé

The first part of the paper discusses all available ice technologies suitable for shrimp cooling and preservation. The second part describes the shrimp farming and processing operations and highlights the importance of using ice slurry. The last part provides installation examples using Sunwell's multi-functional slurry ice generation, storage and delivery systems in the industry. Results from these real operations indicate that ice slurry is a rewarding technology which not only improves the quality of shrimp products, but also enhances the productivity of the shrimp processing plants.
