Résumé

The objective of the study was to define the impact of different temperature conditions during storage on the colour of UHT sterilized milk. Milk colour was evaluated instrumentally by measuring three colour components and calculating the chroma value and colour difference. UHT milk with 2% fat produced in industrial conditions was used as research material. Milk was stored at 4, 8 and 20 °C over a 24-week period. After 20 weeks of storage, the values were seen to be significantly higher for milk stored at 8 °C than for milk stored at 4 °C. An increase in the colour difference in sterilized UHT milk was also seen to be dependent on the storage temperature and was highest in milk stored at 20 °C and lowest in milk stored at 4 °C.
