Résumé
Slurry ice may be produced using falling film technology in which a binary mixture of water and freezing point depressant is chilled as it runs down a vertical refrigerated plate. A practical system for the manufacture of slurry ice in this way which does not require mechanical surface cleaning is currently under investigation by the authors. This paper presents a numerical model to predict the growth rate of ice in a developed laminar supercooled falling film of ice slurry. It refers to a previous paper by the authors, and proposes new equations to describe the local heat transfer at the surface of the growing ice particles. The local mass diffusivity at the ice interface has been included and the evolution of the distribution of particle diameters is observed throughout the film. The model is based on an energy balance. The flow is steady and the mass conservation equations are solved independently of the energy balance. Equations are discretised across the film, using the finite volume approach. A set of results is presented for the range of boundary conditions expected for an actual ice maker, presently under construction.
