Résumé

Under the Presidence of the USA, the Committee on Hygiene of the Codex alimentarius is preparing an International Codex for hygiene in milk and dairy products, which could question the French tradition of raw milk cheese. Though risk analysis can be applied indistinctly to all dairy products, the application of the same rules to all types of cheeses appears to be dangerous and simplistic. The control of the whole chain, from milk production to cheese sale, allows the elimination of the risks for consumers' health due to the possible presence in raw milk cheese of Listeria, Salmonella, Staphyloccoccus or Escherichia coli. It will be the responsibility of producers, and the condition of their survival, to scientifically demonstrate the microbiological safety of their products.
