Résumé

To obtain acceptable storage and transport characteristics of ice slurries, it is necessary to develop methods for preventing ice crystals from recrystallization. Antifreeze protein (AFP) type I, which is found in fish living in cold ambient conditions, is known to be an effective additive for making ice slurries resistant to recrystallization. However, it is expensive and easily degrades. Therefore, they investigated the use of artificial additives with similar properties, silane coupling agent (SCA) and poly(oxyethylene) sorbitan trioleate (POESTO), as substitutes for AFP type I. They analyzed ice crystal surfaces containing SCA and POESTO molecules by using scanning tunneling microscopy to investigate the mechanism of recrystallization inhibition with these additives.
