Résumé

The authors investigated the impact of the packaging atmosphere (air and modified atmosphere, 65% N2, 30% CO2 and 5% O2), temperature (2, 4, 8 or 12°C) on the growth of Listeria monocytogenes in minimally processed coconut. Two inoculum levels were used and the health risks were greater for the higher inoculum level. The results demonstrate that Listeria monocytogenes survives and proliferates on fresh-cut coconut stored in air or modified atmosphere even at 2°C.
