Résumé

Pressure cooling can be defined as the application of an air pressure difference across a product to achieve a predictable cooling rate. Although this is not a revolutionary concept, development of user friendly applications continues. The paper deals almost exclusively with chilled products, as the Western Cape of South Africa is the main production area of table grapes, stone fruit and deciduous fruit. Several systems are described and the results, in terms of chilling time, are given.
