Résumé

Use of controlled atmospheres enabled the storage period to be prolonged and losses to be reduced as compared to storage in air. The greatest quantity of marketable cabbage was obtained during storage under 2.5% CO2 + 2.0% O2 and 2.5% CO2 + 1.5% O2. Low O2 concentrations (1.5-3.0%) combined with 2.5% CO2 was the best combination for a long storage period. Chinese cabbages are susceptible to physiological damage and cultivars have different critical temperatures. For most of the cultivars tested, a storage temperature of 2 °C was better than 0 °C.
